People travel miles to buy Normans wonderful Lardy Cakes. It is said that whilst The Law and sausages are both fine things you wouldnt want to see them being made. After seeing Lardy Cakes being made I can safely say that the same applies to them. Jeanette and Tracy kindly showed me the subtle art of Lardy Cake making. I wont describe it in detail but I can tell you that it involves a lot of lard and a fair amount of folding reminiscent of the Samurai sword making process. Lardy Cakes are not really baked they are roasted in tins. They tend to cook with the ingredients unevenly distributed giving the finished product different qualities in different parts. This makes eating one something of an adventure and you can explore the light fluffy uplands, the fruity foothills and the toffee plains. I do know of one person who actually returned a Lardy Cake to Normans complaining that it was too, well, lardy. This is like taking a zebra back to the shop because it was too stripey. How many calories in a Lardy Cake? I am not telling.
